Ratatouille for beginners

Ingredients

1 large aubergines
2 large courgettes
2 red or yellow peppers
4 large ripe tomatoes
5 tbsp olive oil
supermarket pack or small bunch basil
1 medium onion, peeled and thinly sliced
3 garlic cloves, peeled and crushed
1 tbsp balsamic vinegar
1 tbsp red wine
Dried mixed herbs
Tomato purée
1 tsp sugar 

Step 1(prep)
Wash and Slice courgettes, egg plant and capsicums. Slice onion thinly and crush garlic. Blanch tomatoes and peel off skin and quarter, remove seeds and chop roughly.

Brown veggies with olive oil and butter in frying pan. 
Should look like this.

Step 3
Fry onion with garlic until soft and then add vinegar , wine and sugar. Then add the veggies and tomato to look like this 
Top up with water, tomato purée, basal, salt pepper and a little Tabasco sauce to taste


Allow to cook for 15 minutes and voila 




This meal I served with a lamb shoulder chop and fresh green salad. There is enough to freeze for another night or even eat over the next 2 or 3 days.

Nepal, 2012

So i will add some photos and comments at a later point to put the following in context. This is the end of my trip to trek to Mount Everest's famous Base Camp. Having flown from Lukla (the worlds most dangerous airport) to Kathmandu on the final day i cracked my head on miniature sized door frame walking into the shower room(Nepalese are very very small) and split my head open.



I had to go to the worst hospital of my life (look at the dirty floor) with inept staff  so I didn't allow them to stitch it up as i risked infection so i just asked them to use iodine to clean the wound (yes i know my face looks fat from that angle) Luckily the bleeding stopped before my flight to Bangkok departed and the wound healed within a couple of weeks by itself.

Okay, so i will start to make some posts here soon but just learning to work my way through my new Gmail account and other Google services. Hopefully i can summon the energy to begin posting some pictures and random ramblings of the places i go, fun i have and food i eat..
